Sriracha Lime Mayo

I have a brother-in-law (I won’t name any names) who loved mayonnaise so much as a kid. I’ve heard stories about him taking a slice of bread, spreading a generous layer of mayo on the whole slice, and then spooning a large dollop of mayo in the center. He’d fold up the slice in half and eat around the center, leaving that glorious dollop for the last bite.

Now, I don’t love mayo like my bro-in-law used to, but guys, seriously, this flavored mayo is so good. I could put it on anything and everything. Recently we’ve had it with grilled chicken, cauliflower puffs, veggies, and stir fry. It’s the perfect compliment to any Asian inspired dish.

For those of you who don’t care for mayo, let’s just call this an aoli.

Sriracha Lime Mayo
makes 1 cup

 

1 cup mayonnaise
3 tablespoons Sriracha
1 tablespoon fresh lime juice
Dash of salt

 

Mix all the ingredients together until fully incorporated. Use as a dip, spread, or thin it out with a little olive oil for a dressing.

 

PRO TIP: Mix it together in a bowl with a lid for easy storage in the fridge.
